Chef Tai, who moved to Bryan to attend Texas A&M University in 1998, fell in love with the community and decided to stay. His passion for sushi was ignited under the mentorship of Master Chef Soon Park, a friendship that has now blossomed into a remarkable culinary partnership.

Kanji Sushi TX is not just a restaurant; it’s a testament to the meticulous art of sushi making. Chef Tai and his team are dedicated to presenting sushi that is both traditional and inventive. The menu showcases a variety of options, from classic nigiri and sashimi to unique maki rolls that highlight the chef’s creativity. A standout favorite is the Chef Soon’s Special Roll, which combines high-end nori and authentic Japanese short-grain rice with spicy mayo, fresh yellowtail, avocado, jalapeno, and big-eyed tuna, all topped with a truffle vinaigrette, black pepper, and microgreens.

For those seeking a spicier kick, Chef Tai’s Signature Spicy Tuna Roll is a must-try. Departing from the usual Sriracha base, Chef Tai’s spicy tuna incorporates a unique sauce inspired by Korean chili paste. This roll is layered with cucumber, avocado, and big-eyed tuna, flame-kissed to perfection, and finished with eel sauce, fried potatoes, microgreens, flying fish roe, and sesame seeds, offering a symphony of flavors in each bite.

Another highlight is the Summer Roll, which combines spicy crab mix, avocado, cucumber, and Nordic salmon, topped with spiced sunomono and pico de gallo. And for those who prefer a Texan twist on sushi, the Cowboy Steak Sushi Roll features asparagus, spicy mayo, and steak, all torched and garnished with eel sauce, shredded green onions, and sesame seeds.
